August 14, 2013 (Day 97) – Saratoga Brace Up
We’re spending some time with the Professor this evening for a drink that’s just a little bit shocking when you take a close look at the ingredients.

Professor, you crazy bastard.
The Saratoga Brace Up.
- Take 1 table-spoonful of fine white sugar.
- 2 dashes of Angostura bitters.
- 4 dashes of lemon or lime juice.
- 2 dashes of absinthe.
- 1 fresh egg.
- 1 wine-glass (2 oz) of brandy.
- 2 or 3 small lumps of ice.
Combine the ingredients in a cocktail shaker filled with ice. Shake well and then strain into a highball glass filled ice. Top with seltzer.
This is a modified version of the Saratoga cocktail, adding the absinthe and egg.
This was meant to be a “morning” cocktail, in other words, a little bit of hair of the dog. As the wonderful David Wondrich says in his incomprable book Imbibe! – “If that’s what you need to get going in the A.M. God help you.”
