August 16, 2010 (Day 199) — Jamaican Fizz
Today is National Rum Day! In honor of this fine celebration, I’m making some Jerk Chicken on the barbecue and celebrating with a nice bit of rum coolness.
2 oz Dark Rum
1 oz Pineapple Juice
1 tsp Superfine Sugar
4 oz Club Soda
This is a solid rum drink. The sweetness of the dark rum and pineapple juice is tempered by the soda water. It’s bright and summery. Perfect for some jerk chicken on a cool summer evening!
