July 18, 2010 (Day 169) — Caribbean Screwdriver

It’s a busy Sunday, so we need to boost our energy with a solid brunch. Thick cut bacon, french toast, eggs. We had to make something equally excellent to drink. Something solid. Something tasty, and bright and summery.

Something with coconut rum? Yes. Something with coconut rum!

Caribbean Screwdriver

1 oz coconut rum

1 oz peach schnapps

1 oz creme de banana

4 oz orange juice

2 oz pineapple juice

2 oz cream

Mix together in a highball glass filled to the top with ice. Stir well.

See the tasty french toast in the back! This is a very foofy drink, but it really is a TASTY foofy drink. I mean, I’m not big on sweet drinks, but that really blew me away. It is very sweet, but the citrus brightens it up enough that it’s not completely heavy. A perfect summer brunch drink. Jenn loves it too.
